Ernst Knam was born in Germany in 1963 and, after years spent in the kitchens of prestigious restaurants in the world, arrived in Italy in the late eighties alongside Gualtiero Marchesi as Pastry Master. In 1992 he opened his historic pastry shop in Via Anfossi in Milan, where his unmistakable creations are distinguished by unusual combinations, always following the seasonality of food. His productions are often influenced by the world of design, fashion, architecture and art, and often among his projects includes catering for various fashion designers including John Richmond to Cesare Paciotti, but also collaborates with artists and designers, including Lorenzo Palmeri, with whom he designed Home (is where I want to be), a chocolate praline dedicated to Expo 2015. He also collaborates with Coltellerie Berti creating a collection of different knives for specific uses in the world of pastry.
